Herb Selection: You can use any herb or combination of herbs such as anise seed, sweet basil, caraway seed, chervil, chives, dill seed or weed, sweet marjoram, oregano, parsley, sage, savory, tarragon, or thyme. Fresh herbs should be chopped fine; if using dried, crush them slightly to release oils.
