Ingredients
  • 2 1/2 unbleached all purpose flour
  • 1/4 unsalted butter, melted and cooled
  • 1/2 cold water
  • 5 sugar
  • 1 egg yolk
  • 2 grated orange peel
  • 1 olive oil
  • 1 light rum
  • 3 orange extract
  • 1 salt
  • 1 egg, beaten to blend (for glaze)
  • 2 unsalted butter, melted and cooled (for finishing)
  • 3 sugar (for sprinkling)

    Preheat oven to 325°F. Lightly butter two baking sheets.

    Arrange flour in a mound on a clean work surface and make a well in the center.

    Into the well, add the 1/4 cup melted butter, cold water, 2 tablespoons sugar, egg yolk, orange peel, olive oil, rum, orange extract, and salt.

    Gather the dough together and knead in the remaining flour until smooth, about 1 minute.
