Storage: Keep the Pan Bagna tightly wrapped in foil or plastic wrap in the refrigerator. It is best served very cold and can be made up to 24 hours in advance.
Ingredient Substitutions: If you prefer a vegetarian version, simply omit the anchovies. You may also substitute the sour pickles with gherkins or cornichons for a similar tang.
Tip: The bread acts as a sponge for the flavorful juices. If the mixture seems too dry after resting, add a drizzle of extra olive oil before stuffing. Conversely, if it is too wet, add a few more bread crumbs.
