Note
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. The soup will thicken as it cools; add a splash of water or broth when reheating to loosen the consistency.
If you prefer not to use a microwave, sauté the green onions in olive oil in a large pot over medium heat for 2 minutes. Add potatoes, parsnips, water, broth, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until vegetables are tender. Proceed with blending as directed.
When blending hot soups, be careful to release steam pressure. Remove the center cap of the blender lid and cover it with a folded towel to prevent splattering. Blend in small batches to avoid overflow.
