The giblet broth can be made a day in advance. Store it covered in the refrigerator until ready to use.
If you do not have enough pan drippings, substitute with butter, margarine, or olive oil for the fat in the roux.
For a richer flavor, brown the roux slightly longer before adding the liquid.
