Note
For a refreshing texture contrast, place the drained cherries on a flat tray in the freezer for at least 1 hour before serving. The cold cherries provide a pleasant surprise against the warm chocolate.
This recipe yields approximately 1 1/2 cups of fondue. If you need more for a larger group, you can double the recipe while maintaining the same ratio of chocolate to milk.
To keep the fondue warm at the table, use a fondue burner or a chafing dish. If the chocolate becomes too thick, stir in a teaspoon of warm evaporated milk to loosen it.
Be careful not to boil the chocolate mixture, as this can cause it to seize or become grainy. Low and slow heat is key to a silky texture.
