Ham hock adds a deep savory flavor. For a vegan version, omit the ham hock and add a piece of kombu seaweed or use vegetable broth instead of water for simmering.
Do not add salt or acidic ingredients (like tomatoes or vinegar) during the initial cooking phase, as this can toughen the bean skins. Add them only after the beans are tender.
These beans taste even better the next day as the flavors continue to develop. Store leftovers in an airtight container in the refrigerator for up to 4 days.
If using dried beans, ensure they are not older than a year, as very old beans may not soften properly even with long cooking times.
Adjust the amount of chile powder based on your heat preference. Start with 2 teaspoons if you prefer milder beans.
