Note
Traditional rasgullas are made from chhena (fresh cottage cheese) rather than paneer. If you wish to make chhena from scratch: boil 3.5 liters of milk, remove from heat, and slowly add a mixture of 250ml warm water and 5 tablespoons of white vinegar while stirring. Stop adding vinegar as soon as the milk curdles. Strain through cheesecloth and drain thoroughly.
Do not add more vinegar than necessary when making chhena, as this will make the cheese hard and rubbery.
Serve rasgullas warm or chilled. They keep well in the refrigerator for up to 3 days in the syrup.
Ensure the cheese balls are smooth and free of cracks before boiling, otherwise they may break apart in the syrup.
