This jelly can be stored in the refrigerator for up to 3 months. If processed in a water bath canner for 10 minutes, it can be stored in a cool, dark place for up to 1 year.
Ensure you use liquid pectin specifically designed for jams and jellies for proper setting. Do not substitute with powdered pectin without adjusting the method.
Red peppers yield a brighter, sweeter jelly, while green peppers offer a sharper, more tangy flavor. You can also mix both for a marbled effect.
