Note
Brown rice takes longer to cook than white rice. If you prefer white rice, reduce the simmering time to about 15-20 minutes and add the vegetables later in the process to prevent them from becoming too soft.
This recipe serves 2 very hungry adults, but can be stretched to serve 3 by increasing the rice and liquid by about one-third.
For added flavor, use chicken or vegetable broth instead of water as the cooking liquid.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or broth to restore moisture.
