Note
This recipe is traditionally served during Passover in some Italian Jewish communities, where rice is considered kosher for the holiday, unlike in Ashkenazi traditions.
For best results, use fresh artichokes when they are in season. If using frozen artichoke hearts, thaw and pat dry before sautéing.
Arborio rice is recommended for its creamy texture, but any short-grain rice will work well.
To prevent artichokes from browning while preparing, toss them in lemon water immediately after slicing.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of water to restore moisture.
