Storage: Refrigerate leftover starter between bakings. For indefinite storage, freeze it. To use frozen starter, thaw, feed with 1/2 cup tepid water and 3/4 cup rye flour, and let ferment at room temperature until bubbly.
Feeding: If you need to hold the starter longer than 24 hours before use, feed it the night before with 1/2 cup tepid water and 3/4 cup rye flour. Let it stand at room temperature overnight.
Maintenance: Feed leftover starter every 2 weeks or so by adding a little rye flour and water (3 parts flour to 2 parts water).
Building Quantity: To increase the amount of starter, do so in several steps. Never add more flour than the amount of starter currently on hand. Let it ferment until bubbly before adding more.
Yield: This recipe makes about 4 cups of starter, which is enough for most rye bread recipes requiring a starter, with some left over to maintain the culture.
