Storage: Seal the finished kulfi (still in their cups or cones) in a large plastic bag to prevent freezer burn. They can be stored in the freezer for up to 2 weeks.
Saffron Substitute: If you cannot find powdered saffron, you can use 1/8 teaspoon of saffron threads. Soak the threads in the boiling water for a stronger infusion.
Texture Tip: The key to authentic kulfi is the slow reduction of the milk. Do not rush this step, as it concentrates the dairy solids and creates the signature dense texture that doesn't require churning.
Variations: For added flavor, you can stir in 1/2 teaspoon of cardamom powder or a handful of crushed pistachios or almonds before freezing.
