Note
Sage Quantity: Use 6 tablespoons of minced fresh sage OR 3 tablespoons of dried sage leaves.
Parsley: Use 1 cup of minced fresh parsley.
Seasoning: Add 2 teaspoons of salt or to taste, and 1 teaspoon of freshly ground black pepper or to taste.
Broth: Use 2 cups of turkey, giblet, or chicken broth. Add slowly to avoid a soggy texture.
Taste Test: To check seasoning, melt a little butter in a small skillet, add a tablespoon of the mixture, and cook until lightly golden. Adjust sage, onion, or celery amounts if needed.
Yield: This recipe makes enough dressing for a 16-pound turkey.
