This unique recipe offers two distinct preparations using fresh prickly pears. First, create a bright, pink vinaigrette that blends prickly pear puree with tarragon vinegar and salad oil, perfect for dressing green salads or fruit bowls. Second, transform the remaining fruit into a traditional prickly pear marmalade. By boiling citrus peels and pulp with chopped pears and sugar, you achieve a rich, gelatinous preserve with complex sweet-tart notes. The marmalade is ideal for spreading on toast or pairing with cheeses, while the dressing adds a refreshing zing to any meal. Both components highlight the natural beauty and flavor of the cactus fruit, making them excellent additions to your pantry and table.
