Ingredients
- 4 dried chilies
- 1 clove garlic
- 1/4 tsp. cumin
- 1/2 cup vinegar
- 1 tsp. salt, or less
- 1 bay leaf
- 1/4 tsp thyme
- 1 onion, chopped fine
- 1 cup zucchini, cooked and diced
- 1/2 cup peas, cooked
- 1/2 lb. potatoes, cooked, peeled and diced
- 2 tbs. olive oil
- 1/2 pkg. cream cheese.
Directions
- 1 Remove seeds from the dried chilies and soak them in hot water overnight until soft.

Drain the chilies thoroughly and grind them into a smooth paste along with the garlic clove and cumin.- 3
In a bowl, combine the chili paste with vinegar, salt, bay leaf, thyme, chopped onion, cooked zucchini, peas, and diced potatoes.- 4
Mix well and cover the mixture. Allow it to stand at room temperature for one day or longer to let the flavors meld and the vinegar penetrate the vegetables.- 5
