Note
Use stock made from tongue bones if available for the deepest flavor, but beef or veal stock works well as a substitute.
Bruise the cloves by gently pressing them with the back of a spoon or mortar and pestle to release their oils before adding them to the pan.
Remove the bay leaves and whole cloves before serving the sauce to avoid unpleasant textures.
This sauce can be made ahead and reheated gently. If it becomes too thick upon cooling, add a splash of stock or water to loosen it.
Adjust the acidity by adding more lemon juice or vinegar if the sauce tastes too sweet from the orange.
