Ingredients

1 kg beef roast (chuck or bottom round)
1/4 l red wine vinegar or 50:50 mix of red wine and vinegar
2 pieces bay leaves
2 tbsp whole black peppercorns
2 pieces large onions, sliced
1 piece large carrot, chopped
200 g potatoes, cubed
1/4 l beef bouillon
2 tbsp crème fraîche or sour cream
salt and oil, for roasting

Directions

Place the beef roast in a large non-reactive dish. Cover it completely with the vinegar (or wine/vinegar mixture). Add the bay leaves and whole peppercorns. Cover and refrigerate for 2-3 days, turning the meat at least once daily.

Remove the meat from the marinade and pat it dry with paper towels. Discard the bay leaves and peppercorns, but reserve the liquid and any vegetable pieces from the marinade.

Heat oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Season the meat with salt and pepper. Sear the roast on all sides until deeply browned.

Add the sliced onions to the pot and cook until softened and browned. Pour in the reserved marinade and the beef bouillon. Bring to a boil, then reduce heat to low.

Cover the pot and simmer gently for 1.5 to 2 hours, or until the meat is fork-tender. Turn the meat occasionally. If using potatoes and carrots, add them during the last 45 minutes of cooking.

Remove the meat from the pot and keep it warm. Strain the cooking liquid into a saucepan, discarding the solids if desired, or blend the vegetables into the sauce for extra thickness.
