File powder (ground sassafras leaves) is a traditional thickener and flavoring agent in gumbo. It should always be added after the heat is turned off, as boiling can make it bitter and stringy.
If you do not have pre-made roux, you can make your own by cooking equal parts flour and oil over medium heat, stirring constantly until it reaches a dark chocolate color. This takes patience and care to avoid burning.
Gumbo tastes even better the next day as the flavors continue to develop. Store leftovers in an airtight container in the refrigerator for up to 3 days.
For a richer broth, you can substitute some or all of the water with chicken or seafood stock.
