For dial-gauge pressure canners, process pints or quarts of raw-pack peaches for 35 minutes at 0-1,000 ft, increasing time by 5 minutes for every 3,000 ft increase in altitude up to 40 minutes above 6,000 ft.
4 For weighted-gauge pressure canners, process pints or quarts of hot or raw pack peaches for 10 minutes.
5 Adjust weighted-gauge pressure to 5 lb PSI for altitudes up to 1,000 ft, and 10 lb PSI for altitudes above 1,000 ft.
