Note
Yield: This recipe makes approximately 2 cups of marinade.
Substitution: If using dry sherry instead of cream sherry, increase the honey to 1/2 cup to maintain the sweetness balance.
Safety: Do not reuse marinade that has been in contact with raw meat unless it is brought to a rolling boil first.
Tip: If you plan to use the leftover marinade as a sauce, set aside a portion of the fresh, uncooked marinade before adding it to the raw meat.
Variation: For extra heat, add red pepper flakes to taste.
