Ingredient Substitutions: You can substitute fresh spinach for frozen, but you may need to adjust the cooking time as fresh spinach wilts much faster. For a vegetarian version, use vegetable broth instead of chicken broth.
Tips: If the soup is too thick, add a splash more broth or water. Taste before adding extra salt, as canned broth and V-8 juice can be salty. A splash of heavy cream or a dollop of sour cream added at the end adds extra richness.
