Note
Do not add parmesan cheese to the hot cream sauce while it is still in the pan, as the cheese may cause the sauce to break or become grainy. Instead, garnish each plate individually with parmesan just before serving.
If you do not have Champagne or Asti, you can substitute with a dry white wine such as Pinot Grigio or Sauvignon Blanc, though the flavor profile will be less sweet.
For a thicker sauce, you can mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the cream reduction before adding the shrimp back in.
Shrimp cook very quickly. Watch them closely to avoid overcooking, which results in a rubbery texture. They are done as soon as they turn pink and curl into a C-shape.
Leftover sauce and shrimp can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove over low heat; the pasta is best served fresh.
