For the best flavor, ensure your dashi stock is fresh. If using dried dashi granules, dissolve them in hot water as directed on the package before heating.
If you cannot find precooked bamboo shoots, you can use canned bamboo shoots, but be sure to rinse them thoroughly to remove the canning liquid flavor.
