For a thicker glaze, simmer the strained sauce longer to reduce the liquid content by half.
Store leftover sauce in an airtight container in the refrigerator for up to 1 week. The flavors will deepen over time.
You can adjust the heat level by using more or less Szechwan peppercorns. Toasting them is essential to release their aromatic oils.
This sauce pairs exceptionally well with firm or extra-firm tofu that has been pressed and sliced. Marinate the tofu for at least 30 minutes before baking or pan-frying.
