Morel mushrooms can be expensive and are typically available in spring. If unavailable, you can substitute with cremini or shiitake mushrooms, though the flavor will differ.
Chicken oysters are small, tender cuts of meat located on the underside of the chicken thigh near the backbone. If you cannot find them, substitute with chicken thighs cut into medallions or scallops.
