Storage: The starter can be stored in the refrigerator. It must be used within 1 week or "refreshened" (fed with fresh flour and water) to maintain viability.
Container Tip: Use a "crock" from a "cold-packed cheese" or a similar glass jar to store the starter. Cover it tightly to prevent contamination while allowing gases to escape if vented.
Yield: This recipe makes about 2 cups of starter.
Proofing: To proof the starter for baking, bring it to room temperature. Combine all of the starter with 1 1/2 cups of flour and 1 cup of water. Cover the bowl with plastic wrap and set in a warm place for 12 hours.
Usage: Measure 2 cups of "proofed" starter and set aside for your recipe. Return the remaining starter to its container and refrigerate until needed again.
Maintenance: This starter keeps getting better and better with age. Be sure to use it at least once a week or refresh it to keep the culture healthy and active.
