Note
This marinade yields approximately 1-1/4 cups. Use half for marinating and reserve the other half to brush over the food during the last few minutes of cooking for a glossy finish.
Do not use the marinade that has been in contact with raw meat or poultry as a sauce unless you boil it vigorously for 2 minutes first to kill bacteria.
For a vegan version, ensure the sherry used does not contain animal-derived fining agents, or substitute with dry white wine or rice vinegar.
The enzymes in pineapple juice help tenderize meat, but marinating for longer than 24 hours may result in a mushy texture.
