Note
This recipe is designed for large-batch cooking or canning. If not canning, you can scale down the ingredients proportionally for a standard family-sized meal.
For canning: Fill clean jars leaving 1-inch headspace. Adjust lids and process in a pressure canner. For dial-gauge canners: 11 PSI at 0-2,000 ft, 12 PSI at 2,001-4,000 ft, 13 PSI at 4,001-6,000 ft, 14 PSI at 6,001-8,000 ft. Process pints for 60 minutes and quarts for 70 minutes. For weighted-gauge canners: 10 PSI at 0-1,000 ft, 15 PSI above 1,000 ft. Process pints for 60 minutes and quarts for 70 minutes.
You can add optional ingredients like sliced fresh mushrooms or green peppers along with the other vegetables for added texture and flavor.
Store leftover sauce in the refrigerator for up to 4-5 days or freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
Taste and adjust seasoning at the end of cooking, as saltiness can intensify as the sauce reduces.
