Storage: This recipe makes two meals. Before serving, you can freeze half of the sliced beef and half of the cooking liquid (reserved for gravy) separately in airtight, moisture-proof containers. Label and date them. They can be frozen for up to 6 months.
Reheating Frozen Meat: To serve the frozen portion, thaw the meat and cooking liquid in the refrigerator overnight. Warm the meat in a covered baking dish in a 350&# 194;°F (175ðC) oven for about 20 minutes.
Reheating Gravy: To make gravy from the frozen liquid, thaw the reserved cooking liquid. In a small saucepan, stir together the thawed liquid, 1/4 cup cold water, and 4 teaspoons all-purpose flour. Cook and stir until bubbly and thickened, about 1-2 minutes.
Tip: For easier fat removal, chill the cooking liquid in the refrigerator for an hour before making gravy; the fat will solidify on top, making it easy to scoop off.
