For a vegan version, substitute the dairy yogurt with a thick, unsweetened soy or coconut yogurt. Ensure the yogurt is plain and unsweetened to maintain the savory flavor profile.
The yogurt acts as a tenderizer. For best results, marinate proteins for at least 2 hours, or overnight for tougher cuts of meat. Avoid marinating for more than 24 hours, as the acidity can make the texture mushy.
Adjust the heat level by increasing or decreasing the amount of cayenne pepper. Start with a pinch if you are sensitive to spice.
Store any unused marinade in an airtight container in the refrigerator for up to 3-4 days. Do not reuse marinade that has touched raw meat unless it is boiled first.
