Note
The remaining broth is flavorful and aromatic. Strain out the rosemary and garlic before using. It is excellent as a base for risotto, can be used to cook rice, or can be microwaved and drunk as a light, savory soup. Refrigerate any unused broth in an airtight container for up to 3 days.
Ensure the tomatoes are fully ripe for the best flavor and color. If using a juicer, you may need to press the pulp gently to extract more juice, but do not force solids through the cheesecloth as this will make the broth cloudy.
Do not overcook the chicken by simmering for the full 20 minutes; the residual heat during the steeping phase is sufficient to cook the chicken through while keeping it tender and moist.
