Use a non-reactive bowl (glass or stainless steel) for the sabayon to prevent curdling and ensure even heating.
Keep the heat low; if the mixture gets too hot, the eggs will scramble. If this happens, stop immediately and start over or strain the mixture.
For a non-alcoholic version, substitute the champagne with a non-alcoholic sparkling cider and omit the Grand Marnier, adding a bit of orange zest instead.
Sabayon is best served immediately. It will deflate and lose its airy texture if allowed to sit.
