Note
Use firm white fish such as cod, haddock, or pollock for best results. Avoid oily fish like salmon or mackerel as they do not set well in clear aspic.
For a clearer aspic, ensure the stock is skimmed thoroughly during boiling and strained multiple times. Do not allow the stock to boil vigorously when adding the gelatin.
This dish tastes best when served well-chilled. It can be prepared up to 2 days in advance and stored in the refrigerator.
