The soaking step helps remove some of the bitterness from the poblanos. Ensure you wear gloves when handling chiles to avoid irritating your skin.
If you prefer a milder sauce, remove all seeds and veins carefully from the poblanos before blending. For extra heat, leave some seeds in.
Monterey Jack melts well, but you can substitute with Oaxaca, Queso Oaxaca, or even cheddar for a sharper flavor.
Tortillas should be warmed before serving to prevent them from breaking when folded. You can warm them in a dry skillet or directly over a gas flame.
