Note
The soup can be prepared several days in advance; in fact, the flavor improves with age. If making ahead, store the soup base in the refrigerator and assemble with bread and cheese just before serving to keep the crust crisp.
If you are planning to serve gratin-style, have your guests ready as you remove the bowls from the broiler, or the crust will sink like a leaky barge.
For a variation, try bruschetta smeared with a little Dijon mustard and topped with Brie in place of the Gruyère croutons.
For a luxurious touch, add a dash of Cognac to each serving when you ladle on the soup.
For a lighter version, serve the soup unadorned except for a sprinkling of fresh minced parsley. Pass thin bruschetta or lightly toasted French bread and a small bowl of grated Parmesan at the table.
You may also wish to serve the soup from a tureen for a communal dining experience.
Try Julia Child's version: beat a couple of egg yolks with 4 or 5 tablespoons of port or Madeira, pour under the edge of the crust, and gently stir just before serving.
