Ingredients
1 Thick slice white bread 250ml milk
1 large onion, finely chopped or coarsely grated 25ml cooking oil
37,5ml lemon juice 10ml curry powder 5ml sugar 5ml salt
pinch of pepper 500g minced mutton or beef
2 eggs
12,5ml fruit chutney
3 fresh lemon leaves (optional) Soak the bread in the milk. Using a large frying pan or a heavy-based

Saute the onion in the cooking oil in a large frying pan or heavy-based saucepan until lightly browned.

Combine the lemon juice, curry powder, sugar, salt, and pepper, then stir this mixture into the onions.

Squeeze most of the milk out of the soaked bread, reserving the milk for later use.

Mash the squeezed bread and add it to the onion mixture along with the minced meat, 1 egg, and all but 100ml of the reserved milk. Mix well.

Add the chutney to the meat mixture and cook for a while, stirring often, to blend the flavors.

Preheat the oven to 180 Celsius (350F). Grease a 1.5L ovenproof dish or spray it with non-stick cooking spray.

Transfer the meat mixture to the prepared dish and place in the oven for a few minutes to set the base.

Beat the remaining egg with the 100ml reserved milk and pour this custard mixture evenly over the bobotie.

If using, roll the lemon leaves into funnels and insert them into the bobotie for decoration and aroma.

Bake the bobotie for 30 minutes until the top is golden and set. Serve hot.
