Note
Ensure the veal cutlets are pounded to an even thickness (about 6 oz each) for uniform cooking.
If you prefer a thicker sauce, you can mix 1 teaspoon of cornstarch with a little cold water and stir it into the simmering sauce before adding the cherries.
Leftover sauce can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
