Note
If you do not have cooked millet on hand, you can cook raw millet in water until tender, then drain any excess liquid before blending.
For a richer flavor, you can sauté the chopped vegetables in a little oil separately before adding them to the millet mixture, then simmer together.
Feel free to add other seasonal vegetables such as spinach, zucchini, or carrots for extra nutrition and color.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water if the stew becomes too thick.
