Note
Storage: Wrap sushi rolls tightly in plastic wrap and refrigerate for up to 24 hours for best texture.
Ingredient Substitutions: If Kampyo is unavailable, you can substitute with thin strips of dried burdock root or even cooked carrot sticks simmered in soy sauce. Regular rice vinegar with a teaspoon of sugar per cup can replace sushi vinegar.
Tip: Ensure the spinach is thoroughly drained and cooled before rolling; excess moisture will make the Nori soggy and difficult to roll.
Technique: When rolling, do not pack the filling too tightly, or the roll may burst. The goal is a firm but not dense cylinder.
Serving: Serve immediately after rolling for the crispest Nori texture. Cut rolls in half or into bite-sized pieces using a sharp, wet knife.
