Store the dry mix in an airtight container in a cool, dry place for up to 6 months.
For a smokier flavor, substitute half of the hot water with barbecue sauce. Note that the sugar in the sauce may cause the patties to brown faster, so monitor closely to prevent burning. You can also use wine or vegetable broth instead of water for added depth.
If the mixture is too dry to form patties, add hot water one tablespoon at a time. If it is too wet, add more dry mix or let it sit longer. The baking soda helps the patties rise slightly and improves texture.
