Note
Marinating time can extend up to 5 days for deeper flavor, but do not exceed this to avoid the meat becoming mushy.
When turning the meat during marination, use tongs or a fork carefully to avoid piercing the surface, which can let juices escape.
For a crockpot variation: Brown the meat first, then add all marinade ingredients to the slow cooker. Cook on High for 6-8 hours or Low for 8-10 hours.
Gingersnaps are traditional for thickening and flavoring the gravy. If unavailable, you can use ginger snaps or add extra ginger and a cornstarch slurry for thickening.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The flavor often improves the next day.
Serve with traditional sides such as red cabbage, spaetzle, or mashed potatoes to complement the tangy gravy.
