Storage: Whipped cream can be kept in a sealed container in the refrigerator for up to 2-3 hours before it begins to lose its volume. For longer storage, prepare it fresh just before serving.
Variation - Stabilized Cream: To make whipped cream a day or two in advance, soften 1/2 teaspoon granulated gelatin in 1 tablespoon of cold water. Dissolve the gelatin by setting the cup in a pan of boiling water or over low heat until clear. Stir the dissolved gelatin into the cream just as it begins to thicken. This adds firmness, making it ideal for piping decorations.
Variation - Increased Volume: You can increase the yield and lightness by adding 1 egg white per cup of cream. Beat the egg white until it holds soft peaks, sprinkle in 1 1/2 tablespoons of granulated sugar, and beat until very stiff. Gently fold this meringue into the whipped cream.
Flavor Variations: After whipping, fold in one of the following per cup of cream: 2 tablespoons sifted dark unsweetened cocoa, 2-4 tablespoons rum, cognac, or liqueur, 1/2 cup nougat powder, or 1 teaspoon instant coffee powder.
Tip: Cream for whipping should be at least 1 day old for best results. Ensure all equipment is thoroughly chilled to help the cream whip faster and achieve greater volume.
