Note
Clarified butter can be made by melting unsalted butter and skimming off the white foam that rises to the top, then pouring off the clear golden liquid while leaving the milk solids at the bottom. This prevents burning at higher heat.
If you do not have Madeira wine, you can substitute with dry sherry, Marsala, or even a dry white wine, though the flavor profile will differ slightly.
For a vegetarian version, substitute the beef stock with a rich mushroom or vegetable stock.
Dried cèpes (porcini) have a very intense flavor. If you cannot find them, other dried wild mushrooms like chanterelles or a mix of dried mushrooms can be used, but the soaking time may vary based on the mushroom type.
The soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of stock or water if the consistency has thickened too much.
