Storage: Store the cooled glaze in an airtight container in the refrigerator for up to 2 weeks. It will thicken as it cools; stir well before using.
Usage: This glaze is best applied during the last few minutes of grilling to prevent burning due to the sugar content. Brush it onto chicken skewers, shrimp, fish fillets, or vegetables.
Substitution: If you cannot find mirin, you can substitute with a mixture of dry white wine and a little honey or sugar. For sake, dry sherry is an acceptable alternative.
