Ingredient Substitutions: If you cannot find niter kebbeh, you can substitute with clarified butter or ghee mixed with a pinch of cumin and fenugreek. Berbere is a complex spice blend; if unavailable, try a mix of paprika, chili powder, and cinnamon, though the flavor will differ.
