Ingredients

Directions

  1. Mix equal parts garlic powder and onion powder with half that amount of ground pepper to create the seasoning blend.
  2. Pat the pork loin dry with paper towels and cover it evenly with the seasoning mixture.
  3. Let the seasoned pork stand at room temperature for 15 minutes.
  4. Sprinkle the roast with all-purpose flour until it is evenly coated.
  5. Preheat the oven to 325ðF (165ðC).
  6. Heat vegetable oil in a large skillet over medium-high heat.
  7. Add the roast to the skillet and cook until browned on all sides.
  8. Transfer the browned roast to a deep baking dish.
  9. Add chopped onions to the skillet with the remaining cooking juices and sauté over medium heat until tender.
  10. Remove the skillet from heat and stir in shredded or sliced apples, brown sugar, and ground ginger.
  11. Spoon the apple and onion mixture over the roast in the baking dish.
  12. Add enough water to the bottom of the baking dish to create about 1 cup of liquid.
  13. Roast uncovered for 2 to 2.5 hours, basting every 20 minutes and adding water as needed to maintain at least 1 cup of cooking juices.
  14. Remove from oven and let rest for 10 minutes before slicing.
  15. Strain the cooking juices from the dish to create a sauce.
  16. Slice the pork and serve hot with the strained juices on the side.
