  1. Place the ginger slice and scallion quarters in a small bowl.
  2. Pour 1/2 cup of hot water over the ginger and scallion.
  3. Let the mixture steep for 10 minutes to infuse the water with flavor.
  4. Strain the liquid into another bowl, discarding the solid ginger and scallion pieces.
  5. In a separate bowl, combine the ground pork with the strained ginger-scallion water.
  6. Add the sherry, 3 tablespoons of light soy sauce, 1/2 teaspoon of salt, and 1 tablespoon of cornstarch to the pork mixture.
  7. Mix the pork thoroughly with your hands or a spoon until well combined and set aside.
  8. Heat 6 tablespoons of oil in a wok or large skillet over medium-high heat.
