Description

These homemade potstickers are the ultimate comfort food, offering a delightful contrast between the crispy, caramelized bottom and the soft, steamed top. The filling combines juicy ground pork with fresh scallions and crisp cabbage, seasoned with ginger, soy sauce, and sesame oil for deep, umami-rich flavor. They are perfect for weeknight dinners, party appetizers, or meal-prep freezers. While they require a bit of assembly time, the result is far superior to store-bought versions. Serve them hot with a dipping sauce of soy, vinegar, and chili oil for a truly satisfying bite that brings restaurant-quality flavor right to your kitchen table.

Ingredients

Directions

  1. In a large bowl, combine the ground pork, minced scallions, chopped cabbage, 1 tsp finely minced ginger, 1 tbsp white wine, 1 beaten egg, 1 tsp pepper, 2 tbsp soy sauce, 1 tsp salt, and 1 tbsp sesame oil.
  2. Mix the ingredients thoroughly with your fingers until well combined. Cover the bowl and refrigerate the mixture for at least 30 minutes to firm up the filling.
  3. Place a dumpling wrapper on a clean surface. Spoon about 1 1/2 teaspoons of the filling into the center of the wrapper.
  4. Moisten the edges of the wrapper with water using your finger. Fold the wrapper over the filling to form a half-moon shape, pressing out any air pockets.
  5. Pinch the edges firmly to seal the dumpling. Repeat with the remaining wrappers and filling.
  6. Heat 1 tablespoon of oil in a non-stick frying pan over medium-high heat. Arrange dumplings in a single layer, flat-side down.
  7. Fry for about 2 minutes, or until the bottoms are golden brown and crispy.
  8. Carefully pour in 1/2 cup of chicken stock or water, immediately cover the pan with a lid, and reduce heat to medium.
  9. Steam the dumplings for 5 minutes, or until the liquid has evaporated and the wrappers are cooked through.
  10. Remove the lid and cook for another minute to re-crisp the bottoms. Serve hot with your favorite dipping sauce.
