Puff Pastry
Description
Mastering homemade puff pastry is a labor of love that rewards you with impossibly light, shattering layers of crisp dough. This classic French technique relies on alternating sheets of soft dough with cold, solid butter, folding and rolling repeatedly to create hundreds of distinct layers. When baked, the steam generated by the melting butter pushes the layers apart, resulting in a texture that is both airy and rich. While store-bought options are convenient, nothing compares to the nutty aroma and superior flakiness of dough made from scratch. It is incredibly versatile, serving as the base for elegant fruit tarts, savory meat pies, or simple buttered rolls. Keep your ingredients cold and your hands quick for the best results.Ingredients
Directions
-
Combine all-purpose flour, cake flour, and salt in a large bowl or food processor.
-
Cut the chilled butter into small dice and toss with the flour mixture to coat the pieces.
-
Mix rapidly by hand or with a mixer on low speed until butter pieces are the size of lima beans.
-
Gradually add 3/4 cup of iced water, mixing until the dough just begins to hold together.
-
Add remaining water a tablespoon at a time if necessary, until a shaggy dough forms.
-
Turn dough onto a lightly floured surface and gently press into a rough rectangle.
-
Roll the dough into an 18-inch long rectangle, keeping it cold and floured.
-
Fold the dough into thirds, like a letter, for the first turn.
-
Turn the dough 90 degrees so the fold is to your right, then roll out into a rectangle again.
-
Fold into thirds again for the second turn.
-
Repeat the rolling and folding process two more times for a total of four turns.
-
Wrap the dough tightly in plastic wrap and refrigerate for at least 45 minutes to relax the gluten.
-
Remove from fridge, roll and fold two more times to complete the sixth turn.
-
Wrap the finished dough and refrigerate for at least 1 hour before rolling out for use.
